Today I thought I'd share my favorite recipe and my personal favorite thing to make. Red Beans & Rice, It's super yummy and a great dinner for a cold winters night.
I make mine in the crock pot but you wouldn't have to you could use a large soup pot and that would work perfectly fine.
Prep Time:30 Mins Cook time: 4-5 hours Serves:4-6
You'll need:
Yellow Onion
Green Bell Pepper
Celery
Andouille Sausage
26 oz Canned Red Kidney Beans (You can also use dry beans. I have before)
Chicken Stock or Broth
Cajun Seasoning
Bay Leaf
Olive Oil
Tabasco
After you've let the veggies and sausage cook for around 15-20 minutes on low - medium heat. Turn off stove. Clean can beans or add pre-soaked beans to Crock Pot. Add 3 cups chicken broth, 1 bay leaf, veggie & sausage mixture. And then last but not least however much Tabasco sauce you'd like. I usually use 3-4 good bottle shakes.
Serve on top White Rice.

Chop half of one medium-large onion, Throw into 2 tablespoons of Olive oil. Remove seeds from pepper. Chop pepper and 4 stalks of celery and throw in with onion. Let them cook down and stir ingredients every few minutes.
While those are cooking chop Sausage. Once chopped add to the already cooking vegetables. After adding sausage add 2 tablespoons Cajun seasoning. And let cook for another 5-10 minutes.
