Today I have an amazing dessert loaf to share with you. This recipe is perfect. And can be changed up if you aren't a big fan of orange or cranberries. Lemon blueberry would be amazing or some apples & spices. Just use the base recipe and add whatever floats your boat.
Makes two 9x5 loafs
Bake: @ 350F for 60 minutes. After 60 mins start checking with a tooth pick.
Ingredients:
4 eggs
3/4 cups Unsalted Butter (room temp)
1 1/2 cups Granulated Sugar
1/2 cup Milk
1/3 cup Fresh orange juice
2 tablespoons Orange zest
2 teaspoons Baking Powder
1/2 teaspoon Salt
3 cups AP Flour
3 cups Fresh or frozen cranberries
Icing:
Juice of 2 freshly squeezed oranges
1 tablespoon orange zest
1 - 1 1/2 cup confectioners sugar
Recipe:
Pre heat oven to 350F
In a large bowl or stand mixer cream butter and sugar. Slowly add in one egg at a time.
Once those have been combined add milk, juice & zest; mix together
Now add baking powder, salt and flour. Mix together well.
Fold in fresh or frozen cranberries (I use frozen) and make sure they are fully incorporated
Spray or butter two 9x5inch baking dishes and pour equal parts batter into pans. I used glass but you can use a metal or stonewear baking dishes.
Bake for 60 mins , after 60 minutes begin to test your bread every 5 mins with toothpick to see if it comes out clean. Every climate & oven is different.
Once cooled drizzle with icing.
In a bowl combine orange juice, zest & sugar. Mix well and drizzle over the loaves.
