Foodie Friday | Recipe: Springtime Irish Apple Cake

Aww, Spring it's finally here! The fresh spring air is filling with blooming flowers, the grasses are turning green and the birds are singing.



This is a beautiful time of year. Saint Patrick's Day is the first time I made this recipe. And it's wonderful. Now I myself am not Irish so I'm not really sure what or why this apple cake is Irish but I seen it floating around on Pinterest so I thought I'd give it a go and see what happens. I ended up making it twice in one week it was so good.
I think this is the perfect Springtime recipes. This would be great for a Sunday brunch and just perfect for Easter Sunday. Which I just might make it for again.



2 Eggs
3/4 Cups Milk
6 oz. Butter, (Melted or room temp)
3/4 Cups Sugar
2 Teaspoons Baking Powder
1/8 Teaspoon Salt
1/4 Teaspoons Cloves, ground
1/4 Teaspoons Nutmeg, ground
3 Cups Flour
4  Granny Smith apples
 375 degrees. 45-50 minutes
In a large mixer and or mixing bowl add eggs, milk, and butter. Combine then add sugar, baking powder, salt, nutmeg, & clove. Once all combined slowly add in the flour. If you are mixing by hand I recommend using your hands to add the apples. The batter is very thick and sticky. Don't freak out, that's how it should look. If you are using a stand mixer just mix them on slow. Once done grease a pan. I recommend using a medium to small deep pan. You want the cake to be rather thick not thin. After you've placed your batter in your cake pan sprinkle a small amount of sugar on top. Then place in the over at 375 °F for 45-50 minutes.
